Chicken Noodle Soup is an American favorite, especially in the winter when you are cold and hungry or suffering from the sniffles. Scientists have been trying to prove the medicinal properties of chicken broth for years with some interesting points. All I know is if you are feeling cold or blue, a bowl of hot chicken noodle soup can heal the soul and maybe the body too.
The most important part of the soup is the broth. I love to make the broth in the Instapot or a pressure cooker, you can create a soup in under an hour that would usually take several hours to make. If you do not have a pressure cooker or Instapot, the old-fashion way of boiling the chicken and ingredients creates the most wonderful broth too. The key to a delicious broth is in the seasonings: carrots, celery, onions, garlic, poultry seasoning, salt, and pepper.
My favorite way to make broth is by using a rotisserie chicken. I use the breasts and thighs to make a lot of recipes, and finish with a yummy recipe of soup! It’s a great way to use all the ingredients I purchase while making a killer soup.

For this recipe, I just boiled chicken breasts I add on hand since I didn’t have a rotisserie chicken. Onions, celery, and carrots really make this broth come to life. I don’t think you can make a good pot of soup without those ingredients!

I enjoy taking a simple recipe and adding some creativity to elevate it to something fun or a more interesting bite. Especially when you have young children, an extra little surprise can help them try a new dish and make mealtime a more enjoyable event. My girls still talk about how I used to dye their grits blue, so it would look like the sky with a pat of butter in it! When making chicken noodle soup you can make noodles into different shapes according to the season. For this bowl of goodness, I made heart-shaped noodles. I pre-cooked lasagna noodles and then used cookie cutters to create the fun shapes.

Since I made this for our Galentine’s party, we used hearts!
I’ve always been a fan of hearts, so much so to the point that the students I taught when I was a teacher would refer to me as Miss Heart. Maybe heart chicken noodle soup should be my new go-to!
